Creamy Vegan Brown Rice Pudding

Creamier and richer than the standard thanks to coconut milk

I'm lactose intolerant so I thought I would put together some dairy-free rice pudding with leftover brown/wild rice crowding my cupboard. Just dairy free? Why not vegan? I'll tell you why, because there are not many thick and creamy vegan rice pudding recipes online, only watery and sad vegan rice pudding recipes. If you have a good one, send it my way. Until then I am proud to present my own invented recipe using tofu to thicken and coconut to cream it up.

Creamy Vegan Brown Rice Pudding

1 cup brown rice
(I used a mix of wild and brown rice mix that comes in a pouch)
2 cups vanilla soy or rice milk
1 teaspoon vegetable oil
1/8 tsp salt
1 teaspoon vanilla
2 cinnamon sticks

6 oz firm tofu
1 tblsp flour
2 tblsp vanilla soy or rice milk

1/2 can (6-8 oz approx.) coconut milk, the unsweetened variety
2 tblsp maple syrup or more to taste
1/2 cup raisins (optional)
1 cup vanilla soy or rice milk

Mix the first 6 ingredients together in a sauce pan over medium high heat. Bring to a boil, stir, and reduce heat to low. Simmer for 45 minutes, covered.

Meanwhile puree tofu flour and soy/rice milk in a food processor or blender until very smooth. Heat in a small sauce pan over medium heat. Cook and stir often until the soy mixture thickens, 8-10 minutes. The mixture will make big blurping bubbles. Remove from heat.

Add the cooked tofu mixture to the rice along with coconut milk, maple syrup, raisins, and remaining cup of soy/rice milk. Simmer another 30 minutes depending on your variety of brown rice. I found it was best to over-cook the rice a little so that it had a softer texture as brown rice tends to hardier than white.

I thought the rice pudding tasted best served hot, but it can be served cold. You may need to add more soy/rice milk to the cold product as it thickens more as it cools. I ate it for breakfast like extra special oatmeal.

  5. @Naomid - Not a coward, just dont have an account at all. Plus it looks fucking disgusting, plain and simple. Ive seen more appealing things at a crime scene. You have to eat with your eyes first, but my eyes committed suicide after seeing this abortion.

  6. its too soupy looking.. it has nothing to do with being a vegan, its about the way it looks, rice pudding should be thick and luscious, not runny and disgusting. if you post something and someone doesn't like it, dont bitch.. cause you put it out for the world to see. dont go on serious eats to cry like a baby. just admit that its a shit dish and you failed.

  10. Is baby vomit still vegan, or does that now technically come from an animal?

    Nonetheless if I found a baby who vomited absolutely knock out delicious rice pudding like Naomi makes, I would it president, and wonder how delicious must be the non dairy breastmilk that her mother produces, also miraculously.

  12. Anonymous is a freak show huh?! This is hilarious! Seriously Anonymous...tell us....how often do u look at baby vomit? I've had rice pudding several different ways. Some indian restaurants make it with rose water and its more watery than your traditional style rice pudding. Who died and made you rice pudding master? Why dont you pull yer head out of yer ass before you open ur lame mouth.

    P.S. your girlfriend doesn't even like rice pudding. She told me so after I skull fucked her the other day.

  13. Hey, thanks for this recipe! I have to agree I was disappointed by the other nondairy recipes I found online...using just soy milk makes for a sad and watery pudding! My boyfriend's mom makes arroz con leche all the time and he loves it, but unfortunately he can no longer digest dairy, so I'm planning on making this for him.
